Santa Maria BBQ

Our most popular BBQ, it’s been used by some of the best BBQ chefs in the world to grill on at The Big Grill. This style of BBQ hails from California, not normally a state associated with great BBQ. However this style of cooking dates back to the cowboys where they built oak fires in specially dug out pits in the desert to cook their beef over a live wood fire. This grill is a real head turner and can grill a very large volume of meat.

For: steaks, fish, sausage, offal, vegetable, chicken thighs, quail, fruit and more

Our wood fired smoker straight out of Houston Texas, this is a larger version of the one we use in Fowl Play. Low ‘n’ slow is the aim of the game here. We transform the often ignored tough muscles of an animal into smokey, tender, melt-in-your-mouth hunks of deliciousness.

For: brisket, shoulders for pulling, all types of ribs, wings, chicken, turkey, duck, roasting joints
